Introduction

Green tea has been widely known as a refreshing and beneficial drink for health. One aspect that can affect the health benefits of green tea is the way of brewing. Research Methods

This study involved several green tea powder preparations, namely powder preparations from the heads of Djenggot, Japanese, and Twinings. The method used to assess antioxidant activity is DPPH, which is a general method for measuring the ability to capture free radicals by a compound. Measurements are made using the UV-Visible spectrophotometer to determine the concentration of antioxidants after brewing for 3 and 6 minutes.

Research Result

The results of phytochemical screening show that the djenggot head powder preparation contains alkaloid compounds, flavonoids, glycosides, steroids, saponins, and tannins. Likewise with Japanese powder preparations containing alkaloids, flavonoids, glycosides, saponins, and tannins. While Twinings powder preparations also have alkaloid components, flavonoids, glycosides, steroids, and tannins.

Antioxidant activity from brewing for 3 minutes in the Djenggot head preparation shows strong results with a value of 90,9697 μg/ml, while the brewing for 6 minutes shows a very strong result of 43,2757 μg/ml. For Japanese preparations, the brewing 3 minutes obtained a value of 93,5173 μg/ml (strong category), and 6 minutes got a value of 49,2670 μg/ml (very strong category). Meanwhile, Twinings in the brewing 3 minutes showed moderate activity of 104,4535 μg/ml, and at 6 minutes produced a strong activity of 85,1237 μg/ml.

From the results obtained, it appears that brewing time affects the antioxidant activity of green tea. Long brewing tends to produce extracts with higher antioxidant concentrations, especially in the heads of the heads of Djenggot and Japanese. However, in Twinings preparations, although the brewing results showed a moderate category, brewing for 6 minutes produced strong activity, showing that there were variations in the extraction of antioxidant compounds between tea brands.
